Some Quality Characteristics of Fish Oil and Silage Produced From Culture Marine Fish Processing Waste

چکیده
Çalışmada, kültür deniz balıkları işleme endüstrisi artıklarından formik asit hidrolizi ile balık silajı ve yağı üretilmesi, elde edilen ürünlerin kimyasal mikrobiyolojik kalitesinin tespiti yağının yağ kompozisyonun belirlenmesi amaçlanmıştır. Bu kapsamda yapılan çalışmalar sonucunda silajının nem içeriği %80,40, tüm aşamalarda ürün önemli göstergelerinden birisi olan pH değerinin de 3,62 3,89 arasında değişim gösterdiği tespit edilmiştir. Balık kuru ağırlıktaki madde, ham protein, kül değerleri sırasıyla %19,60, %48,26, %15,17 17,01 olarak bulunmuştur. Ayrıca ürünün toplam mezofilik aerob bakteri, psikrofilik bakteri koliform bakımından güvenli olduğu, üretilen doymuş asidi miktarı %20,64, doymamış ise %70,49 belirlenmiştir. Toplam n-3 %12,15, n-6 %19,87 n-3/n-6 oranı da 0,61 saptanmıştır.
